Gluten-Free Spiced Apple Cookies

Gluten-Free Spiced Apple Cookies

Cake-like cookies that are gluten-free, dairy-free, and oil-free. If you love the flavors of fall, you will love these cookies.

Ingredients

For Cookies

  • 1/4 cup unsweetened applesauce
  • 3/4 cup brown sugar
  • 1 egg
  • 2 cups gluten-free flour mix*
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp vanilla extract
  • 1 large apple; grated [braeburn or golden delicious work well]

For Glaze

  • 1 cup powdered sugar
  • 2 TBSP non-dairy milk
  • 1/2 tsp vanilla extract

Instructions

For Cookies

  • Preheat oven to 375 degrees.
  • Peel apple, grate, and set aside.
  • In a medium mixing bowl stir applesauce and brown sugar, until combined, followed by egg and vanilla; mix well.
  • In a separate bowl, whisk together all dry ingredients. Once combined, add 1/2 the dry ingredients to the wet, slowly stir together, and then add the last of the dry ingredients.
  • Just before the flour mixture is fully incorporated, gently stir in grated apple.
  • Scoop rounded tablespoons of dough onto a parchment lined baking sheet. Bake for 12-15 minutes and let cool, completely, on wire rack before glazing.

For Glaze

  • Add all ingredients for glaze in a small bowl.** Once combined, slowly pour over cooled cookies.

Notes

* For this recipe I used Bob’s Red Mill gluten-free baking flour. However, I believe any, gluten-free flour mix will do.
**If glaze is too thick, slowly add more milk. In contrast, if glaze is too thin, add more powdered sugar, until desired consistency.
