I learned pretty quickly that convenience is key when doing your first Whole30 (or any round of Whole30) My favorite thing to do is batch cook chicken breast, shred it, and utilize it in different ways throughout the week. Yes, I am still eating chicken for every lunch, but it gives me the opportunity to still create variety and save on time!
This cranberry pecan version of chicken salad is extremely simple! I am also sure there are many variations of this recipe floating around the internet but I figured I would share my [Whole30 compliant] for anyone interested.
Cranberry Pecan Chicken Salad
With raw pecans and dried cranberries, this easy lunch offers a little taste of Autumn, all year round.
Course: Lunch; Dinner
2 cups shredded chicken (I use this recipe for convenience)
1/2 cup raw pecans; roughly chopped
1/3 cup [Whole30 compliant] dried cranberries*
1/3 cup [Whole30 compliant] mayo (I use Primal Kitchen)
salt and pepper to taste
mixed greens or spinach
*Finding compliant dried cranberries was a little difficult for me. They need to be unsweetened or only sweetened with apple juice.
Combine all ingredients, except your mixed greens, in a bowl.
Plate your mixed greens and top with 1 cup of the chicken mixture.
Save remaining chicken mixture in an airtight container, and refrigerate for up to 3 days.
